With over 40 years of experience in hospitality, Thomas Siarkos has built a reputation as a dedicated small business owner and community supporter in Saskatchewan. He owns and operates Memories Dining & Bar, a Regina restaurant recognized across Canada for its high standards and exceptional dining experience.

Originally from Greece, Thomas began his journey in the hospitality industry in Toronto, working at respected establishments such as Le Macaron, the Toronto Hilton Harbour Castle, and the Sutton Place Hotel. During this time, he had the opportunity to serve a wide range of high-profile guests, including actors, foreign diplomats, and Canadian political leaders.

In 1981, he moved to Regina to help manage L'Habitant Restaurant. He later founded Memories Dining & Bar in 1989, growing it into an award-winning restaurant celebrated for its culinary excellence and innovative global cuisine. Over the years, he and his team have served guests from across Canada and around the world including members of the Royal Family, every Canadian Governor General from 1981 to 2021, several Prime Ministers, and a variety of other distinguished guests from the worlds of arts, sport, and diplomacy. The restaurant has also been recognized nationally by TripAdvisor and Narcity as one of Canada’s top dining destinations, among many other accolades.

Thomas has been a long-standing supporter of small business, tourism, and economic development in Saskatchewan. He has previously served on the Board of Directors of the Saskatchewan Chamber of Commerce, as well as on advisory committees for the City of Regina Mayor’s Office and the President’s Advisory Committee at the University of Regina.

He is also the co-founder of An Evening in Greece, an annual fundraising gala that he has been actively involved with since its inception in 1994. The event celebrates Greek culture while supporting health and community organizations across the province and has raised funds for causes such as the Hospitals of Regina Foundation, Regina Palliative Care Inc., and the Neonatal Intensive Care Unit (NICU).

Thomas remains committed to mentoring new entrepreneurs and giving back through initiatives that promote business leadership, civic engagement, and community well-being.
